Why does my new hinoki cutting board have such a strong fragrance?

That scent is the natural aroma of hinoki (Japanese cypress, Chamaecyparis obtusa). There is no synthetic coating, oil, or chemical finish — the wood's own oils produce the fresh, slightly citrusy smell, long valued in Japanese craft and architecture for its cleanliness and resistance to moisture. The fragrance mellows over the first few weeks of regular washing and use.

Why should I wet the hinoki cutting board before using it?

Lightly wetting the board creates a thin moisture barrier that prevents food juices, oils, and pigments from staining or seeping into the wood grain. A quick rinse before each cutting session noticeably reduces stains, keeps odors from absorbing, and helps the board dry evenly afterward.

How do I clean and dry the hinoki cutting board after use?
